Established in 1772, Yamagen has been a leading company of soy sauce and miso paste.
Made with Enrei soybeans and rice produced in the Hokuriku area.
This particular miso was made using two to three times the usual amount of
koji needed in Yamagen's miso making.
To accelerate the fermenting process, the miso was taken out from the barrel once
and put back in bringing the bottom side up which inevitably expands the areas
where the miso gets in contact with oxygen.
The flavor of Enrei soybeans and the golden ratio of soybeans to rice
makes this miso full of flavor without needing dashi stocks.
Also, since sakekasu was not used in the process, the micro-organisms
are well and active in the miso, which makes it packed with the enzyme.
The package might get inflated as a result but that's a testament to
how fresh and authentic this miso is.
