It takes all day for its processing, which is well finished by hanging noodles one by one to stretch gradually and dry. Tartary buckwheat is a healthy food with rutin (quercetin) in abundance, which is one of the polyphenols. Enjoy serving with cold or hot throughout the seasons.

■ How to serve:
・ Put plenty of water (more than 3 L) in a pot. Bring it to a boil, and add noodles, stirring to separate noodles with chopsticks.
・ When boiling again, lower the heat and be careful not to boil over.
・ Boil approx. 4~5 minutes. When the core of the noodles is softened, drain the water and rinse the noodles with cold water (with iced water if possible).
・ Be careful not to burn yourself and not to have boiling over.
・ Do not eat if you are allergic to buckwheat.
・ Even if the boiled water may be colored in yellow, do not worry about coloring agent which is not used at all.
